    PINEAPPLE UPSIDE DOWN CAKE

    List of Ingredients


    • TOPPING:
    • 1/2 cup butter or margarine
    • 1 1/2 cups brown sugar
    • 9 pineapple rings
    • 9-18 maraschino cherries
    • pecan halfs
    • CAKE:
    • 2/3 cup butter
    • 1 1/2 cups sugar
    • 2 teaspoons vanilla extract
    • 4 eggs
    • 3 1/2 cups flour
    • 4 teaspoons baking powder
    • 1 1/3 cups milk


    Instructions


    1. Preheat oven to 350F.

    2. Add butter and brown sugar in the skillet, heat over low heat till makes a liquid.

    3. Place pineapple rings and cherries on sugar and butter mixture, then top with the pecans.

    4. Cake batter; place butter in large mixing bowl, cream and add sugar and beat well.....

    5. Add eggs and vanilla, beat until light and fluffy.

    6. Mix flour and baking powder, add alternately with milk and beat until smooth.

    7. pour cake batter over pineapples and cherries.

    8. Bake 35 - 40 minutes or until toothpick inserted into center comes out clean.

    9. Invert cake while hot. Serves 15
