PINEAPPLE UPSIDE DOWN CAKE

- TOPPING:
- 1/2 cup butter or margarine
- 1 1/2 cups brown sugar
- 9 pineapple rings
- 9-18 maraschino cherries
- pecan halfs
- CAKE:
- 2/3 cup butter
- 1 1/2 cups sugar
- 2 teaspoons vanilla extract
- 4 eggs
- 3 1/2 cups flour
- 4 teaspoons baking powder
- 1 1/3 cups milk
Instructions
- Preheat oven to 350F.
- Add butter and brown sugar in the skillet, heat over low heat till makes a liquid.
- Place pineapple rings and cherries on sugar and butter mixture, then top with the pecans.
- Cake batter; place butter in large mixing bowl, cream and add sugar and beat well.....
- Add eggs and vanilla, beat until light and fluffy.
- Mix flour and baking powder, add alternately with milk and beat until smooth.
- pour cake batter over pineapples and cherries.
- Bake 35 - 40 minutes or until toothpick inserted into center comes out clean.
- Invert cake while hot. Serves 15
