    List of Ingredients


    • 2 teaspoon cornstarch
    • 1/2 cup chicken broth
    • 1/4 cup red wine vingar
    • 2 tablespoon soy sauce
    • 2 teaspoon vegetable oil plus 2 tablespoon vegetable oil, divided
    • 3/4 pound lean pork cut into thin stripes
    • 1 cup sliced carrots
    • 1 cup broccoli florets
    • 3 green onions thinly sliced
    • 1/2 cup cashews
    • Hot Cooked Rice


    Instructions


    1. In a bowl comine cornstarch, broth, vinegar,soy sauce and 2 teaspoons of oil until smooth and set aside.
    2. In a large skillet or wok over med-high heat stir fry pork in 1 tablespoon of oil until no longer pink.
    3. Remove and keep warm.
    4. Heat remaining oil
    5. Stir-fry carrots and broccoli until crisp and tender.
    6. Stir in broth mixture and green onions.
    7. Bring to a boil; cook and stir for 2 minutes or until thickened.
    8. Return meat to pan and heat though, stir in cashews.
    9. Serve over rice.
    10. Yields; 4 servings
