Instructions
- Soak 3 lbs. of fish fillets in just enough buttermilk to cover fish;
- Refrigerate in covered container with 1 lemon sliced and layed over fish for 2 to 3 hours ( this helps remove any fishy taste)
- Heat 1 pint of oil in a heavy 2 1/2 quart saucepan.
- Drain off buttermilk
- Cut fillets in half (make triangle shapes)
- Dredge in dry pancake mix.
- In another bowl, combine 2 cups pancake mix and 2 1/2 cups club soda to give consistency of buttermilk.
- Dip floured fillets into batter let excess drip off inot bowl.
- Deep fry 4 minutes on each side
- DO NOT PILE FISH ON TOP OF EACH OTHER.
- can keep warm in a 250 oven till all fish is fried.
