    Instructions


    1. Soak 3 lbs. of fish fillets in just enough buttermilk to cover fish;
    2. Refrigerate in covered container with 1 lemon sliced and layed over fish for 2 to 3 hours ( this helps remove any fishy taste)
    3. Heat 1 pint of oil in a heavy 2 1/2 quart saucepan.
    4. Drain off buttermilk
    5. Cut fillets in half (make triangle shapes)
    6. Dredge in dry pancake mix.
    7. In another bowl, combine 2 cups pancake mix and 2 1/2 cups club soda to give consistency of buttermilk.
    8. Dip floured fillets into batter let excess drip off inot bowl.
    9. Deep fry 4 minutes on each side
    10. DO NOT PILE FISH ON TOP OF EACH OTHER.
    11. can keep warm in a 250 oven till all fish is fried.
