    List of Ingredients


    • 1 1/4 cups plus 2 tablespoons sifted flour
    • 1 cup sugar
    • 2 teaspoons baking powder
    • 1/2 teaspoon salt
    • 1/3 cup soft shortening
    • 2/3 cup milk
    • 1 teaspoon vanilla
    • 1 large egg


    Instructions


    1. heat oven to 400
    2. line 18 medium muffin cups with paper baking cups ( or grease and flour muffin tins)
    3. sift dry ingredints into bowl
    4. add shortening, milk and vanilla
    5. beat 2 minutes scrapeing sides of bowl constantly
    6. add egg and beat 2 more minutes scraping bowl constantly
    7. pour batter into prepared miffuin cups filling cups no more then 1/2 full
    8. bake 15 to 18 minutes
    9. cool and frost with your favorite icing.
