    THE RECIPES IN THIS CATEGORY WERE MY MOTHER-IN-LAWS AND WHEN SHE PASSED AWAY HER LITTLE TIN BOX THAT HELD HER RECIPES WAS GIVEN TO ME SO THIS IS MY WAY TO HONOR HER.......


    List of Ingredients


    • 3/4 cup fine bread crumbs
    • 1/2 cup milk
    • 1 pound ground beef
    • 1 egg beaten slightly
    • 3/4 cup finely chopped onion
    • 2 1/2 teaspoon salt
    • 2 tablespoon butter
    • 1 1/3 cups minute rice
    • 1 can 8.5 oz. sliced pineapple
    • 1 green pepper diced
    • 1/4 cup catsup


    Instructions


    1. Combine bread crumbs, milk beef, 1/4 cup onion, and 1 1/2 teaspoon salt.
    2. Gently form 20 meatballs
    3. brown the meatballs in butter in large skillet.
    4. Add rice and remaining onions stir gently until rice is slightly browned.
    5. Drain pinaplle, measuring syrup.
    6. Add water to syrup to make 1 3/4 cup of liquid.
    7. Cut each pinapple sile inot 6 wedges
    8. Gradully add with the liquid and 1 teaspoon of salt and remaining ingredients to rice.
    9. Stir throughly, bring to a boil, reduce heat and cover and simmer for 5 minutes............
    10. makes 4 servings
