    CHEESE POTATO PUFFS

    List of Ingredients


    • 12 medium peeled and cubed patatoes
    • 2 cups shredded cheddar cheese (divided)
    • 1 1/4 cups milk
    • 1/3 cup butter
    • 1 to 2 teaspoons salt
    • 2 eggs beaten


    Instructions


    1. Place potatoes in saucepan and cover with water. Cover and bring to boil.

    2. Cook until tender 15 -20 minutes

    3. Drain and mash

    4. Add 1 3/4 cup of cheese, milk,butter and salt.

    5. Cook and stir over low heat until cheese and butter are melted.

    6. Fold in eggs

    7. Spread in a greased 13x9x2 baking dish.

    8. Bake uncovered at 350 for 25-30 minutes.

    9. Sprinkle with remaining cheese.

    10. Bake 5 minutes longer or until cheese is melted.

    11. Yields 12-14 servings.
