    List of Ingredients


    • 1 1/2 pounds (4 to 5 meduim) potatoes, peeled & diced
    • 1/2 teaspoon salt
    • 3 tablespoons butter or margarine
    • 2 tablespoons flour
    • salt and pepper
    • 2 cups of milk
    • 2 hard boiled eggs- peeled and sliced
    • 2 tablespoons chopped onion
    • 3 tablespoon dried bread crumbs


    Instructions


    1. Place potatoes in large saucepan. cover with cold water. Add 1/2 teaspoon salt and bring to a boil.
    2. Reduce heat to low and cook 20 to 25 minutes or until potatoes are tender, drain. Reserve.
    3. melt 2 tablespoons butter in meduim saucepan. Add flour, salt, and pepper, cook until bubbly.
    4. Add milk; stir well
    5. Cook, stirring constantly, until thickened. Combine potatoes, hard boiled eggs, onion, salt and pepepr in a lightly greased 1 1/2 casserole.
    6. Add white saude; blend lightly with spatula.
    7. Melt remaining 1 tablespoon butter. Add bread crumbs and mix well. sprinkle butter crumbs over sasserole.
    8. Bake at 350 for 30 minutes Serve hot.
    9. Makes 4 servings
