    A really good supper. I use my own homemade mild Italian Sausage. I don't always have leftover mashed potatoes, so I boil and mash some especially for this. I usually take a teaspoon and put in a pinch or two of oregano, basil, thyme, sage and 1/2 a pinch of marjoram for the mixed herbs.

    List of Ingredients




    1 large onion, chopped
    2 tablespoons butter
    2 cups leftover mashed potatoes
    2 tablespoons cream or milk
    1/2 teaspoon mixed herbs
    1 teaspoon prepared mustard
    Black pepper
    1 pound thick sausages

    Recipe



    Preheat oven to 375ºF.

    Fry the onions in the butter until soft and light brown in colour. Re-mash or mash the potatoes with the cream, mixed herbs and mustard. Fold in the fried onions and season well with black pepper (accordinbg to taste).
    Turn into a shallow fireproof dish, (I use a 10-inch pyrex pie plate), arrange the sausages on top of the potato mixture.
    Cook at 375ºF for 40 - 45 minutes until the sausages are nicely browned.

    Serves 4. So adjust accordingly if you have more people for supper.
