Oven Barbecued Chicken

Recipe Introduction
Dot served this Oven BBQ Chicken on numerous occasions.
It's easy to prepare, and makes it's own sauce to put
on top of white rice. The meat falls off the bones...
it's fork tender.
List of Ingredients
- 1-Chicken fryer, cut up
- 1-Large Onion, sliced in thin rings
- Sauce:
- 1/2 Cup-Tomato Juice or Sauce or Catsup
- 1/4 Tsp Cayenne Pepper or 1 /2 Tsp Louisiana Hot Sauce
- 1/2 Tsp Dry Mustard or 1TBS prepared mustard
- 2 TBS Sugar
- 1 Bay Leaf
- 3 Cloves Garlic, minced
- 1/2 Tsp salt
- 1/4 Tsp. pepper
- 2 TBS Worcestershire Sauce
- 3/4 cup Vinegar
- 3 TBS Butter
Instructions
- Preheat oven to 325 degrees. Place onion slices in the bottom of the boiler pan or large casserole dish. Place
chicken pieces skin side up on top of the onions. Salt
and pepper chicken and add a little water to cover the
bottom of the pan.
- Bake 30 mins., turn the chicken over, salt & pepper that side and bake 30 mins. more. Turn chicken again,
pour on sauce and bake 45-60 mins.longer until tender.
Baste the chicken every 10-15 minutes during the last
hour.
Final Comments
You may choose to omit the sauce recipe above and use
any favorite store bought BBQ sauce. (About 2 cups are
needed) Just be sure that the sauce isn't too thick
at the end of the cooking to make a good thin "gravy"
for white rice.
Serves 4-5.
