    1 egg
    1 cup milk
    1/3 cup self-rising flour
    1 cup self-rising cornmeal mix
    3 or 4 tablespoons shortening or vegetable oil

    Preheat oven to 450° F. Melt shortening in a 10-inch iron skillet in the preheating oven. The skillet should sizzle if a few drops of water are dropped into it, but watch carefully to be sure it does not catch fire. (If using oil, heat the skillet before adding oil.)
    Beat egg well, then whisk in the milk. Stir in cornmeal and flour.

    Tilt the skillet around to grease it well. Pour excess oil or melted shortening into the corn bread batter.

    Pour batter in the hot skillet. Bake 15 to 20 minutes, until browned on top.

    Cut into 10 or 12 pieces and serve while hot.
