    Chicken Caprese with Tomato Basil Cream

    List of Ingredients


    • 2/3 cup soft bread crumbs
    • 1/3 cup crumbled feta cheese
    • 1 tablespoon chopped fresh or 1 teaspoon dried basil
    • 1/4 teaspoon salt
    • 1/4 teaspoon pepper
    • 3 tablespoons olive oil
    • 2 tablespoons lemon juice
    • 4 skinned and boned chicken brest halves


    Instructions


    1. Stir together first five ingredients in a shallow bowl.
    2. Whisk together olive oil and lemon juice until blended.
    3. Dip chicken into olive oil mixture, and dredge in bread crumb mixture, pressing to coat.
    4. Place in a lightly greased 11x7 inch baking dish.
    5. Bake at 375 degrees for 30 minutes until chicken is done.


    Final Comments


    1 cup spahgetti sauce
    2 tablespoons whipping cream or light sour cream
    1 tablespoon fresh basil or 1 teaspoon dried basil
