Chicken Caprese with Tomato Basil Cream

List of Ingredients
- 2/3 cup soft bread crumbs
- 1/3 cup crumbled feta cheese
- 1 tablespoon chopped fresh or 1 teaspoon dried basil
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 3 tablespoons olive oil
- 2 tablespoons lemon juice
- 4 skinned and boned chicken brest halves
Instructions
- Stir together first five ingredients in a shallow bowl.
- Whisk together olive oil and lemon juice until blended.
- Dip chicken into olive oil mixture, and dredge in bread crumb mixture, pressing to coat.
- Place in a lightly greased 11x7 inch baking dish.
- Bake at 375 degrees for 30 minutes until chicken is done.

1 cup spahgetti sauce
2 tablespoons whipping cream or light sour cream
1 tablespoon fresh basil or 1 teaspoon dried basil
