    Scalloped Potatoes

    3 tablespoons butter
    2 tablespoons all-purpose flour
    1-teaspoon salt
    ¼ teaspoon pepper
    3 cups heavy whipping cream

    6 medium russet potatoes, pared and sliced thin

    2-quart casserole dish

    Recipe

    Make white sauce of first 5 ingredients.
    Melt butter in saucepan over low heat.
    Sift flour over top of melted butter salt, and pepper.
    Add heavy whipping cream slowly. Cook quickly, stirring constantly, till mixture thickens and bubbles—wooden spoon is best.

    Put half the potatoes in greased 2-quart casserole; cover with half the white sauce. Repeat layers.

    Cover and bake at 350 degrees about 2 hours. Uncover and continue baking till top is browned. Makes 4 to 6 servings.
