Fettuccine Verde
List of Ingredients
- 8 oz. of fettucinne
- Boiling salt water
- 6 tbs. butter
- 1 cup sliced green onions (shallots) including tops
- 2 cloves of garlic, minced or pressed
- 1 cup whipping cream
- 1 1/2 cups of grated Parmesan cheese
- Salt and pepper to taste
- 1/8 tsp. of ground nutmeg
Instructions
- Cook fettucinni as per instruction
- While noodles are cooking, melt butter in a wide fying pan over medium-high heat
- Add green onions and garlic and cook stirring for 2 minutes
- Add cream and boil rapidly until slightly thickend and large shiny bubbles form (about 2 minutes)
- Add hot drained noodles to pan and toss lightly
- Add 1/2 cup of cheese and toss until noodles are evenly coated
- Add another 1/2 cup cheese and salt and pepper to taste and toss again
- Sprinkle nutmeg and remaining 1/2 cup cheese over top just before serving
