List of Ingredients
- 4 chicken breasts, boneless, skinless
- 1/2 cup flour
- 2 tbs. olive oil
- 1/4 cup green bell peppers, diced
- 1/4 cup onions, diced
- 1 tsp. minced garlic
- 1/4 cup black olives, sliced
- 1/2 cup tomatoes, diced
- 2 tbs. Basil, chopped
- 3/4 cup white wine or chicken broth
- Salt & pepper to taste
Instructions
- Heat oil in heavy skillet
- Dredge chciken in flour and saute
- Set aside and keep warm
- Add the peppers, onions and garlic to the skillet
- Cook until onions become transparent
- Add tomatoes, basil and olices
- Cook fo 2 minutes
- Add the wine and simmer until lightly thick
- Spoon over warm chicken
