TEXAS STYLE CRAB CAKES

Recipe Introduction
Crab cakes and cold beer are one of my favorite combinations for an appetizer on a hot afternoon
List of Ingredients
12 oz crab meat
1 cup masa flour
1 small onion finely diced
1 red pepper finely diced
1 chipotle pepper finely diced
zest of 1 lime
juice of 1 lime
6 tbsp mayonaisse
salt and pepper to taste
1/8 tsp cayenne pepper
1/2 cup finely chopped Cilantro
Recipe
Combine the above and form into patties. Cover and refrigerate or put into the freezer until firm
1 egg beaten with 3 oz milk
1 cup seasoned bread crumbs
Take the patties from the fridge and put into the egg mixture and them into the bread crumbs
Heat about an inch of oil in a skillet to about 350 degrees and fry each of the patties until golden brown. Place on papper towel and allow to drain. Serve hot with Chipotle Mayonaise
