Artichoke Bites

List of Ingredients
2 jars marinated artichoke hearts, divided
1 large onion, chopped
1 clove garlic, minced
4 eggs
1/2 cup seasoned dry bread crumb
1/2 teaspoon salt
1/8 teaspoon pepper, oregano, thyme and hot sauce
2 cups shredded cheddar cheese
2 tablespoons minced fresh parsley
3/4 cup coarse crumbled french fried onionsRecipe
Drain marinade from 1 jar of artichokes into a large skillet. Drain remaining jar, discarding marinade. Finely chop the artichokes. Saute artichokes, onion, and garlic in skillet with marinade until golden, about 5 minutes. In a bowl, beat eggs until foamy. Add bread crumbs, seasoning and pepper sauce. Stir in cheese, parsley, and artichoke mixture; mix well. Spoon into a greased 11x7 inch baking dish. Bake at 350ºF for 25 minutes. Remove from oven and sprinkle with fried onions. Bake for an additional 5 minutes or until set. Cool slightly before cutting. Serve warm or cold. Yield: 3 dozen
