Beef Sausage Stacks

6 ounces cream cheese, softened
2 teaspoons drained horseradish
1 teaspoon fresh chopped parsley
2 tablespoons finely grated onion
1 pound smoked summer sausage, thin slicedRecipe
Combine cream cheese; horseradish, parsley, and onion. Mix well. For each "cylinder" spread 7 slices of beef sausage with cream cheese mixture, stacking them to form a cylinder. Top with a slice of sausage. Repeat for each cylinder. Wrap in waxed paper and chill 3 hours or more. When ready to serve, cut each stack into 6 wedges.
