    Fish/Seafood: Salmon Stuffed Pea Pods

    List of Ingredients

    36 snow pea pods, fresh
    3 ounces fat free cream cheese
    2 tablespoons chives
    4 ounces smoked salmon, flaked

    Recipe

    Rinse pea pods. Snap off stems and pull strings off the side. If pea pods are not crisp, soak in ice water for 30 minutes. With thin knife, open pea pods along straight side. In bowl, combine chives and cream cheese. Add salmon and mix gently. Spoon about 1 teaspoon mixture into each pea pod. Cover and refrigerate until ready to serve. Serves 36.
