    Fish/Seafood: Simple Shrimp Sophistication

    List of Ingredients

    1/2 pound medium shrimp - peel, devein, cut in half
    1 tablespoon light margarine
    2 tablespoons white wine or water
    juice from 1/4 lemon
    old bay seasoning or crab boil to taste
    24 light crackers
    1/8 cup light herbed cheese
    1/8 cup light cream cheese
    fresh dill, parsley or cilantro

    Recipe

    Place shrimp, margarine, wine, lemon juice and seasoning in a microwave safe dish. Cook on high for 2 minutes. This can be done in a small pot on the stove as well. Set aside and let cool. Whip together the cheeses until light and fluffy and fully combined. Spread a small amount on each of the crackers. Top with a half of shrimp and a small pieces of herb.
