Chile: Chile con Queso with Dippers

Chile con Queso:
3/4 cup chopped onion
1 clove garlic, finely chopped
1 1/2 teaspoons chili powder
8 ounces reduced fat cream cheese
1 can chopped green chiles, drained
1/2 cup dry white wine or water
1 1/2 cups chopped fresh tomatoes
1/4 teaspoon liquid hot pepper sauce (or to taste)
DIPPERS:
4 carrots, peeled and cut into sticks
1 red bell pepper, cut into strips
1 green bell pepper, cut into strips
1 jicama, peeled and sliced
Recipe
In a large skillet, combine chopped onion and 3 tbl. water. Cover and cook over medium low heat, stirring frequently, until onion is softened, about 5 minutes. Add the garlic and chili powder and cook, stirring, until chili powder is fragrant, about 1 minute. Reduce heat to low. Break cream cheese into several chunks and add it, along with the green chiles and the wine, to the skillet. Stir until the cheese melts and the mixture is smooth, about 5 minutes. Stir in the chopped tomato and season with hot pepper sauce. this recipe can be made 1 day ahead and refrigerated. Serve dip warm, surrounded by chips and veggies for dipping.
