Seafood: Dilled Cucumber Shrimp Spread

1 cup dry curd lowfat cottage cheese
8 ounces light cream cheese
1/4 cup plain yogurt
1 tablespoon chopped fresh dill weed
1 teaspoon lemon juice
fresh ground pepper
1 medium cucumber, seeded, shredded -- well drained
1 can small shrimp, rinsed, drained
Recipe
Place all ingredients except pepper, cucumber and shrimp in a blender or food processor. Cover and blend on high speed about 30 seconds, or process until smooth. Spread mixture on shallow 9 inch serving plate and sprinkle with pepper. Top with cucumber and shrimp. cover and refrigerate at least 22 hours or until chilled. Serve with sliced vegetables or crackers. Cover and refrigerate any remaining spread. Makes 2 1/2 cups spread.
