    1/2 eggplant
    1 clove garlic, minced
    1-1/2 tablespoons tahini
    1 tablespoon lemon juice
    1 tablespoon olive oil
    1/2 teaspoon salt
    1/8 teaspoon pepper
    Toasted sesame seeds
    Cayenne pepper
    Chopped parsley

    Recipe



    Preheat oven to 400�F. Bake eggplant 25 to 30 minutes or until tender.� Cool slightly; peel. In a blender, pur�e eggplant.� Add garlic, tahini, and lemon juice; blend until mixed.� With motor running, drizzle oil into blender to make a smooth paste. Add salt and pepper; mix well. Transfer to a serving dish; garnish with sesame seeds, cayenne pepper, and parsley.� Serve with pita bread. Serves 2
