Sweet: Ginger Fruit Dip

1 cup lowfat cottage cheese
1 medium banana, cut into chunks
1/8 teaspoon ground ginger
thawed apple juice concentrate
Recipe
In a blender, combine the cottage cheese, banana, and ginger. Cover and blend until the mixture is smooth. Blend in enough apple juice concentrate (about 1 tablespoon) to make the dip a desired consistency. Place dip in an airtight container; cover. Chill. Serve with fruit slices (apple wedges, kiwi fruit slices, or no-sugar mandarin orange sections). Yield: 1 1/4 cups or 5(1/4-cup) servings
