Guacamole: Perfect Guacamole

List of Ingredients
2 Tbsp minced onion
1 medium jalapeno
1 garlic clove, minced (optional)
2 tsp fresh coriander (do not substitute ground)
Juice of 1/2 lime
2 large ripe avocados, pitted and peeled
1 large tomato -- peeled, seeded, and chopped
Salt and extra lime juice to taste

1. Combine 1-1/2 tablespoons onion with jalapeno, garlic, coriander, and juice of 1/2 lime in the work bowl of a food processor or blender. Chop ingredients using the pulse button or the on-off switch until mixture is almost pureed. Turn mixture into a mixing bowl.
2. Mash avocado into jalapeno-onion mixture with a fork. Add chopped tomato and remaining minced onion to avocado mixture; stir to blend. Season to taste with salt and additional lime juice.
Serve chilled or at room temperature with tortilla chips. Makes 4 to 6 servings.
Guacamole can be prepared several hours ahead and stored in the refrigerator until ready to serve. Lime juice sprinkled over the guacamole will prevent the mixture from darkening.
