Bean: Three Alarm Texas Black Bean "Caviar"

List of Ingredients
1 can black beans, rinse and drain
1 medium onion, chopped
1 small red bell pepper (seed and chop)
1 pickled jalapeno pepper, finely
chopped
1 clove garlic, finely chopped
1/4 cup red wine vinegar
2 tablespoons sugar
1 teaspoon chili powder
1/2 teaspoon dried savory
1/2 teaspoon ground cumin
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon cayenne pepper
1/8 teaspoon white pepper
2 teaspoons fresh lemon juice
Recipe
In large mixing bowl, combine beans, onion, red pepper, jalapeno, and garlic. In a medium saucepan, combine vinegar, sugar, chili powder, savory, cumin, salt and peppers. Bring to a boil and simmer for 1 minute. Using back of a spoon, mash about a quarter of the beans against the side of the saucepan (to help thicken mixture). Remove from the heat and stir in the lemon juice. Transfer to a bowl, cool to room temperature, and refrigerate at least 1 hour (up to 5 days). Return to room temperature before serving. Serve in a bowl, accompanied by chips for scooping. Makes 2 1/2 cups.
