Tomato: Tomato Scallion Spread

3 tablespoons finely chopped sundried tomatoes -- not oil packed
3 tablespoons water
8 ounces nonfat cream cheese, room temperature
1/4 cup minced scallions
Recipe
Bring water and tomatoes to boil in small saucepan or in microwave; simmer 2 minutes then let cool. Combine with softened cream cheese and scallions. Chill before serving. Serve with crackers, pita wedges, or vegetable slices, or use as a sandwich spread with turkey or ham. Makes about 18 tablespoons (18 servings).
