Guacamole: Traditional Guacamole

1 large ripe avocado
3 cloves garlic, mashed with salt
juice of 1 lime
1 green onion, fine chopped
2 tablespoons cilantro, fine chopped
black pepper to taste
Recipe
Halve avocado, remove pit and lightly mash in a small bowl. Please don't mash it to a paste, it should be chunky. Add garlic, scallion, lime juice and pepper. Continue to mash and work in the seasonings. Add cilantro at the end and mix well. Serve immediately. If you are not serving it immediately, put the pit in the bowl with the guacamole and cover very tightly with plastic wrap. This will help the guacamole from discoloring. Serving Suggestions: You can serve this guacamole as a dip with tortilla chips and salsa. It can also be an appetizer with shredded vegetables and warm tortilla wedges. I also like it as a topping for bread or as a condiment for other dishes.
