    Low Fat Moosewood Cookbook

    List of Ingredients




    16 oz White beans 1 1/2 cups cooked
    1/3 c Red peppers roasted
    1 Clove garlic minced
    2 tb Fresh lemon juice up to 3
    2 tb Fresh parsley chopped
    Salt and pepper to taste

    Recipe



    1. Combine beans, red pepper, garlic and lemon juice in a food processor.

    2. Blend until smooth.

    3. Stir in parsley, salt and pepper.

    Variations: Use roasted garlic. Substitute basil or dill for parsley.
