Almond Fried Shrimp

12 jumbo shrimp, uncooked
1 cup all-purpose flour
1/8 teaspoon salt
1/2 cup milk
1 egg
1-1/2 cups sliced almonds
4 cups vegetable oil Recipe
Peel, devein, and butterfly shrimp, leaving tails intact.� Line a large baking sheet with waxed paper.
In a small bowl, combine flour and salt.� In another small bowl, combine milk and eggs, whisking until well blended.
Dredge shrimp (not tails) in flour mixture.� Dip shrimp (not tails) in milk mixture.� Press almonds over the shrimp, coating all but the tails.� Place shrimp on prepared baking sheet, curing tails up over shrimp.� Freeze for 1-1/2 hours or until firm.
In a deep fryer, preheat oil to 350�F.
Add shrimp to hot oil in batch; cook until deep golden brown.� Drain on paper towels.� Serve with cocktail sauce, tartar sauce, and lemon wedges.
