    Almond Fried Shrimp

    12 jumbo shrimp, uncooked
    1 cup all-purpose flour
    1/8 teaspoon salt
    1/2 cup milk
    1 egg
    1-1/2 cups sliced almonds

    4 cups vegetable oil

    Recipe



    Peel, devein, and butterfly shrimp, leaving tails intact.  Line a large baking sheet with waxed paper.

    In a small bowl, combine flour and salt.  In another small bowl, combine milk and eggs, whisking until well blended.

    Dredge shrimp (not tails) in flour mixture.  Dip shrimp (not tails) in milk mixture.  Press almonds over the shrimp, coating all but the tails.  Place shrimp on prepared baking sheet, curing tails up over shrimp.  Freeze for 1-1/2 hours or until firm.
    In a deep fryer, preheat oil to 350°F.

    Add shrimp to hot oil in batch; cook until deep golden brown.  Drain on paper towels.  Serve with cocktail sauce, tartar sauce, and lemon wedges.

    Serves 4
