    Artichoke: Artichoke Green Chile Bake

    List of Ingredients

    3 jars marinated artichoke (6 oz each)
    1 medium onion, chopped
    1 clove garlic, minced
    10 eggs, beaten
    1/2 cup fine bread crumbs
    4 cups shredded Monterey jack cheese
    1/2 teaspoon salt
    1/2 teaspoon basil
    1/2 teaspoon oregano
    1/4 teaspoon pepper
    1 can chopped green chiles

    Recipe

    Drain artichokes, reserving 2 tbl. marinade. Coarsely chop artichokes and set aside. Saute onion and garlic in reserved marinade. Mix with artichokes, eggs, bread crumbs, cheese, seasoning and chiles. Pour into two 8" square baking dishes. Bake at 325ºF for 35-40 minutes or until set. Cut into squares to serve as appetizers. Makes 50 squares.
