    Bruschetta/Crostini: Artichoke & Mozzarella Crostini

    List of Ingredients

    1/2 cup unsalted butter at room temperature
    3 cloves garlic, pressed
    1 french baguette, cut into 16 pieces -- thin sliced
    8 ounces marinated artichoke hearts -- drained, chopped
    1 pound mozzarella cheese, thinly sliced

    Recipe

    Preheat the oven to 375¼F. Cream the butter and garllic until smooth. Spread thinly on one side of each slice of bread and place on a baking sheet. On each slice, place 1 Tlb. chopped artichokes. Cover with 1 slice of mozzarella. Bake until the cheese is melted and the edges are brown, 10 to 15 min. Strips of sun-dried tomatoes or roasted peppers may be substituted for the artichokes. For large gatherings, cut the baguette in half lengthwise and spread the entire surface, cut into hunks to serve.
