4 plumb tomatoes, diced
2 green onion or 1 small shallot, thin slice
1 clove garlic, finely minced
salt, pepper to taste
fresh oregano and basil, minced, to taste
2 tablespoons white or rice wine vinegar
1 tablespoon olive oil
1 loaf fat free french bread, cut
1/2 " slices
Recipe
Combine tomatoes, onion, garlic and seasonings in a small bowl. Add vinegar and oil. Mix well and chill. The flavor improves as the ingredients marinate. Lightly toast the bread slices. Serve either separately or with the tomato mixture on top. Serving Suggestions: This wonderful tomato compote can also be used as a sauce for cold chicken or poached fish. It also makes a wonderful salad dressing.
