1/2 pound chorizo sausage
8 flour tortillas
8 slices jack or cheddar cheese

Remove meat from casing; crumble or chop. Place in a skillet; cook over medium heat until cooked through. Drain on paper towels; keep warm. Lightly butter one side of each tortilla. Place a nonstick skillet or griddle over medium heat; lightly butter surface. Add tortilla, buttered-side-up, and cook until tortilla puffs and begins to brown slightly; flip tortilla. Place 1 slice cheese and 1 tablespoon meat on half the tortilla; fold over to cover filling. Lower heat, flip quesadilla and continue to cook until cheese melts. Repeat with remaining tortillas, cheese and sausage. Serve immediately.
