Artichoke: Cheesy Artichoke Tarts

32 wonton wrappers
1 cup shredded cheddar cheese
8 ounces nonfat cream cheese
1/2 teaspoon ground red peppeer
1 tablespoon Dijon mustard
14 ounces artichoke hearts, drained, chopped
1/4 cup chopped red bell pepper
Recipe
Heat oven to 350ºF. Spray 32 mini muffin cups with nonstick cookign spray. Gently press 1 wonton wrapper into each muffin cup, allowing ends to extend above cups. Spray edges of wrappers with no stick cooking spray. Set aside. In medium bowl, combine cheese, cream cheese, ground red pepper and mustard; mix well. Stir in artichoke hearts and red pepper. Spoon about 1 tablespoonful cheese mixture into each cup. Bake for 18-20 minutes or until cheese mixture is set and edges of wrappers are lightly browned. Garnish with fresh parsley sprigs, if desired. Serve warm. Makes 32 appetizers.
