    Seafood: Creamed Crab on Toast

    List of Ingredients

    2 cups whipping cream
    1/4 cup dry vermouth
    1 tablespoon black currant liqueur
    salt and pepper to taste
    1 pound fresh crabmeat
    toasted bread rounds
    1/4 cup freshly grated Parmesan cheese

    Recipe

    In a large saucepan, combine cream, vermouth and liqueur. Bring to a boil over high heat; reduce by half. Add salt and pepper; cool slightly. Stir crabmeat into cream mixture. Preheat broiler. Divide mixture among toasted rounds. Dust with parmesan and broil just until cheese browns. Garnish with parsley and serve immediately. Makes 4 dozen appetizers.
