1 1/2 pounds lean ground beef
2 large yellow onion -- minced
1 tablespoon paprika
2 tablespoons lowfat sour cream
1/2 pound chorizo
2 large jalapeno chiles -- diced fine
1 lemon -- juiced
16 corn tortillasRecipe
Melt butter in large skillet to cook beef, chorizo, onion and chile. Cook until beef browned and chorizo separates. Add paprika, salt, pepper and garlic to taste. Turn to low and simmer 10 minutes. Remove from heat, drain half of liquid; mix in lemon and fold in sour cream. Let stand 5 minutes to blend flavors. Divide mix into tortillas, roll tightly; use toothpicks to hold each together. Fry tortillas in butter until semi-brown. Serves 8.
