Cheese: Fried Mozzarella

1 pound mozzarella cheese -- cut into 16 spears
2 eggs
1/3 cup flour
4 teaspoons water
1 cup dry fine breadcrumbs
Recipe
Measure flour into flat dish. Combine eggs, water, salt and pepper in bowl; beat with fork til well blended. Put breadcrumbs into another flat dish. Dip cheese strips into flour, into egg, then into breadcrumbs. Be sure every spot is covered with crumbs. Line large pan with waxed paper. Lay cheese out on it and chill for one hour or more. Gently fry a few cheese strips at a time in hot fat, browing both sides. Remove with slotted spoon to drain on paper towels. Serve with marinara sauce for dipping.
