    Seafood: Grilled Gravlax Style Salmon

    List of Ingredients

    1 1/2 pounds skinned salmon fillets
    1 tablespoon canola oil
    1 teaspoon salt
    1 teaspoon sugar
    1/3 cup chopped fresh dill
    1/2 cup lowfat sour cream
    1 teaspoon small drained capers
    dill sprigs
    36 slices party rye bread

    Recipe

    Prepare medium hot fire. Oil grill rack or coat with nonstick cooking spray. Rub salmon with the oil, then sprinkle evenly with the salt and sugar. Sprinkle with the dill, patting to adhere. Grill the fish, turning once, 8-10 minutes, until it is just cooked through. Let the fish cool, then slice thinly. The fish can be grilled early in the day. Stir together the sour cream and capers; let stand at least 15 minutes or refrigerate up to 6 hours. To serve, overlap slices of fish on platter. Garnish with dill sprigs and lemon wedges. Serve at room temp accompanied by the sour cream and bread slices. Makes 8-10 appetizer servings.
