Mushroom: Ham Mushrooms

1 1/2 pounds mushrooms
6 ounces chopped ham
2 tablespoons oil
3 tablespoons diced bell pepper
3/4 cup grated Swiss cheese
1/4 cup soft bread crumbs
12 tablespoons chopped parsley
Recipe
Wipe mushrooms clean with a damp paper towel. Separate the stems from the caps and set aside. Chop the stems and combine with finely chopped ham. In a skillet, heat oil over medium heat. Saute ham mixture quickly with chopped red bell pepper. Stir in grated Swiss cheese, soft bread crumbs, and chopped parsley. Spoon the ham mixture into the mushroom caps and arrange on a baking sheet. Bake in a 400ºF oven for 8 to 10 minutes. Arrange on a platter. Serves 24.
