    Quesadilla: Ham & Artichoke Quesadillas

    List of Ingredients

    4 flour tortillas
    2 tablespoons mayonnaise
    1 4 ounces thi sliced cooked ham
    3/4 cup shredded Gruyere cheese
    6 ounces marinated artichokes, drain, chop
    1 tablespoon olive oil
    2 tablespoons chopped fresh chives

    Recipe

    Heat oven to 450ºF. Line a 15x10 inch baking pan with foil. Spread each tortilla with mayonnaise. Top 2 tortillas with ham, 1/2 cup of cheese and artichokes. Top with remaining tortillas. Brush both sides of each quesadilla with oil. Place in foil lined pan. Sprinkle top of each with remaining 1/4 cup cheese, chives and paprika. Bake at 450ºF for 3-5 minutes or until light golden brown and crisp. To serve, cut each warm quesadilla into 8 wedges. Makes 16.
