Mushroom: Jake's Crab Stuffed Mushrooms

20 large mushrooms
1/4 cup finely chopped onion
1/8 teaspoon pepper
3 tablespoons butter
2 tablespoons flour
3/4 cup milk
1 teaspoon Worcestershire
1 can crabmeat
1 green onion, finely chopped
1 1/2 teaspoons dry mustard
2 egg yolks
Recipe
Clean and dry mushrooms; remove stems and finely chop the stems. Saute stems in butter, with onion for several minutes. Sprinkle on flour and mustard, then stir. Take off heat and stir in milk. Return to heat and cook (stirring constantly) until boils. Simmer for a few minutes. Add seasonings and Worcestershire. Stir in crab and taste for seasoning. Beat yolks; stir a little of hot mix into yolks, then add yolks to saucepan. Stir over very low heat for 1 minutes.
Remove from heat and stir in parsley and chopped green onion. Cool and then chill. (Can be done ahead up to this point.) Saute mushroom caps quickly n butter. Season them lightly and then stuff with crab mixture. Dust with Parmesan and bake at 425ºF until hot and puffing.
