    Potato: Potato Skins

    List of Ingredients

    4 baking potatoes
    2 tablespoons butter
    2 tablespoons oil
    1/2 cup cheddar cheese -- shredded
    1/2 cup nonfat sour cream
    1/4 cup green onion -- finely chopped
    6 tablespoons bacon bits

    Recipe

    Rinse and pat dry potatoes. Using fork, pierce the potatoes several times. Microwave on high until tender, 20-25 minutes, rotating potatoes several times during cooking. Meanwhile, in small saucepan heat butter and oil over low heat until butter melts. Remove the potatoes from oven and let them cool slightly.

    Preheat broiler. Cut potatoes lengthwise in half and scoop out all but 1/4" of potato pulp on the sides. Cut lengthwise in half again. Place on rack over broiler pan, cut surfaces up. Brush each with oil mix. Sprinkle with cheddar and bacon bits. Broil 4" from heat until crisp and browned. Transfer to platter. Serve with onion and sour cream. Serves 4.
