Quiche: Bacon & Potato Pie

1 pound bacon
1 onion chopped
8 eggs lightly beaten
1 pound potatoes shredded
2 2/3 cups shredded Cheddar cheese
1/8 teaspoon pepper Recipe
Preheat oven to 350°F. Spray a 13x9-inch baking pan with non-stick vegetable spray. In a large skillet, cook bacon until crisp; remove and crumble. Add onion to drippings; cook until lightly browned. Remove from skillet. In a large mixing bowl, combine eggs, potatoes, cheese, crumbled bacon, eggs, and pepper; gently mix until well combined. Pour into prepared baking pan. Bake for 45 minutes or until center is set. Cut into squares.
