Spinach: Spinach Tart Appetizer

List of Ingredients
2 packages frozen chopped spinach
2 tablespoons minced shallots or scallions
1/4 cup butter
1/4 cup minced ham
salt and fresh ground pepper
1 dash grated nutmeg
3 whole eggs
1/2 cup sour cream
1/2 cup half and half
1/2 cup + 1 tbl. grated parmesan cheese
1 medium tomato, peeled, cut thin wedges
Recipe
Thaw spinach and drain well. Saute shallots or scallions in butter or margarine 2 to 3 minutes. Add spinach and
saute over high heat, stirring constantly until liquid hasevaporated and spinach is dry. Place spinach in bowl with ham, seasonings, eggs, sour cream, half and half and 1/2 cup of Parmesan cheese and blend lightly. Process in blender or food processor in 3 batches until pureed.
Prepare a 10 inch pie plate by greasing and sprinkling with remaining 1 tablespoon Parmesan cheese. Spoon in spinach mixture. Bake in preheated 350ºF oven for 25 to 30 minutes or until set. Remove from oven; place thin wedges of tomatoes in circle on top. Dust lightly with salt, pepper and minced parsley. Return to oven for 5 minutes to heat through. Remove from oven; cool 10 minutes before slicing into serving wedges.
