Wine-Glazed Chicken Wings

3 pounds chicken wings, tips removed
1/3 cup soy sauce
1/3 cup orange juice
2/3 cup dry red wine
3 cloves garlic, mashed
2 tablespoons chopped gingerroot
6 tablespoons red currant jelly
2 tablespoons dry red wine
2 tablespoons grated orange rind
1 tablespoons thinly sliced orange rind
Recipe
Disjoint chicken wings. Arrange in a 13x9-inch non-aluminum baking pan.
In a small bowl, combine soy sauce, orange juice, wine, garlic, and gingerroot; mix thoroughly. Pour over chicken wings. Cover baking pan with plastic wrap; refrigerate overnight.
Preheat oven to 375F. Line a baking pan with aluminum foil. Spray a cooking rack with non-stick vegetable spray; place in baking pan.
Drain chicken; arrange on rack.Roast for 45 minutes, turning wings once. Remove from oven.
In a small saucepan, combine jelly, wine, and grated orange rind. Cook, stirring constantly, until jelly is melted. Brush wings generously with glaze. Return to oven; bake for 10 minutes. Turn; brush again with glaze.Ê Bake for 10 minutes. Arrange on a plate in overlapping rows; sprinkle with sliced rind. Serve warm.
