African Chicken Wings

4 cloves garlic, minced
2 green onions, minced
1-1/2 teaspoons salt
1 tablespoon Chinese 5 spice
2 teaspoons paprika
1 teaspoon rosemary, crumbled
1/2 teaspoon cayenne pepper
2 tablespoons vegetable oil
4 pounds chicken wings, tips removed
Peanut-Coconut Sauce (below)
Recipe
In a large mixing bowl, combine garlic, green onions, and salt; stir until well blended and a paste forms. Add 5 spice powder, paprika, rosemary, cayenne, and oil; mix well. Add chicken wings; toss and stir until wings are completely covered with the marinade. Cover; chill for 4 hours or overnight.
Preheat oven to 425°F. Line a broiler pan with aluminum foil. Spray the rack with non-stick vegetable spray. Arrange wings, skin side up, on prepared broiler rack. Bake 25 to 30 minutes or until golden brown.
PEANUT-COCONUT SAUCE
1/3 cup peanut butter
1/4 cup canned cream of coconut, well stirred
2 cloves garlic, chopped
1/4 cup water
1/4 cup red bell pepper, chopped
1/8 teaspoon red pepper flakes
1 teaspoon soy sauce
Coriander sprigs
In blender, combine peanut butter, cream of coconut, garlic, water, bell pepper, red pepper flakes, and soy sauce; process until mixture is smooth. Pour the sauce into a serving bowl. Place on a platter; surround with chicken wings. Garnish with coriander.
