    Raspberry & Chipotle Wings

    List of Ingredients

    1 kg Chicken wings

    Marinade:
    * 1 1/2 dl Raspberry juice - fresh (300 g raspberries)
    * 50 gr Chipotle
    * 1/2 dl Olive oil
    * 1/2 dl Soy sauce (Kikkoman or other Japanese)
    * 2 Tbsp Thyme, fresh (or substitute with 1 Tbsp dry thyme)

    Recipe

    Use a juicemaker to make the fresh raspberry juice. Grind the chipotle in an electric coffee grinder until you get a fine chipotle powder. Boil the chipotle and thyme in the fresh raspberry juice 5 minutes. Mix with the other ingredients and let the marinade cool. Cover the wings with marinade and marinate the wings for 6 - 12 hours. Grill the wings until the skin gets crispy but not burnt. Enjoy with or without your favorite dip. Freeze leftover marinade an use later for another batch of wings.
