2 pounds boneless roast, trim fat
4 cups raw pinto beans
2 cloves garlic, sliced
1 tablespoon chili powder
2 tablespoons cumin
1 teaspoon oregano
3 tablespoons Tabasco sauce
3 quarts water
salt and pepper to taste
Recipe
Put beans, meat, garlic, salt and pepper in a large pan. I use a 6 quart slow cooker. Add water. Bring to a boil on top of stove. Boil 20 to 30 minutes. Add spices. Cover and cook slowly in a 250 degrees oven or on number 3 slow cooker about 24 hours. Stir to mix and break up roast. Serve over Doritos with chopped onions, lettuce, tomatoes, cheese and hot sauce. May also roll in flour tortillas with cheese for delicious burritos.
