Crockpot Soup: Lentil & Canadian Bacon

4 cups water
1 teaspoon dried thyme
1/2 teaspoon salt
1/4 teaspoon pepper
2 cans vegetable broth
2 medium carrots, cut into 1/2" pieces (1c)
1 medium potato, peeled, cut 1/2" pieces (1c)
1 medium onion, finely chopped (1/2c)
1 medium celery stalk, cut 1/2" pieces
16 ounces lentils, rinsed
6 ounces sliced Canadian bacon, coarse chopped
Recipe
Mix all ingredients in 3 1/2- to 4-quart slow cooker. Cover and cook on low heat setting 8 to 9 hours or until lentils are tender. Stir well before serving. 8 servings.
