    Crockpot Soup: Yellow Pea Soup & Sausage

    List of Ingredients




    16 ounces dried yellow split peas, sorted, rinsed
    4 cups water
    10 ounces chicken broth
    1 cup carrot strips (2x1/4")
    6 ounces smoked chorizo, casing removed -- cut 1/4" slices
    1/4 teaspoon salt
    1/4 teaspoon pepper
    1/2 cup sliced green onions
    11 ounces corn niblets

    Recipe



    In 4-6 quart slow cooker, combine all ingredients except onions and corn; stir gently to mix. Cover and cook on low setting for 7-9 hours. About 10 minutes before serving, stir in onions and corn. Increase heat setting to high and coveer, cooking an additional 5-10 minutes or until corn is thoroughly heated. Serves 6.
